Think of the best hummus you had and then add sweet fluffy carrots!
We all love hummus! Now imagine you can have the best hummus you have ever had, but then healthier and with a hint of sweetness. Pureed carrots have a really nice fluffiness to them which makes a great base for hummus! Spread it on toasted bread or crunchy baguette if you want to serve your friends a nibble. It’s a great snack while having a drink. And with carrot being the main ingredient of the hummus you are primarily eating vegetables! No regrets!
(For 1 bowl of hummus– enough for about 4 people)
Ingredients
- 300g carrots
- 100g chickpeas, either cooked or drained from a can
- 2 tablespoons olive oil
- 2 tablespoons tahini sesame paste
- 1 teaspoon lemon juice
- A pinch of cardamom
Basically just cook the carrots and blend!
Cut carrot into thick slices, put into a pot and add water until they are covered. Add the olive oil and a generous pinch of salt. Bring to a boil and then simmer for about 10 minutes.
After the carrots are cooked, drain the cooking liquid but fetch about 50ml cooking liquid.
Put the cooked carrots, the fetched liquid and the chickpeas into a food processor. Add the tahini, lemon juice, cardamom and a pinch of black pepper. Blitz until fluffy and very smooth.
Drizzle the hummus with olive oil and serve with crunchy toasted bread!
