Chunky guacamole with beans

Creamy and chunky dip that is just perfect with every Mexican feast!

Guacamole is the perfect accompaniment for every authentic Mexican feast! It is easy, the perfect combination of creamy and chunky and no real Mexican meal is complete without it. If you ever had real chunky guacamole you will probably ask yourself what that liquid gooey green stuff is that you previously bought in jars. At least that is what happened to me. Making guacamole is easy and the perfect way to get rid of a ripe avocado you have lying around.

Most guacamole recipes rely on avocado for the rich creaminess. Try to include some beans in there as well, which gives even more richness and an additional texture element in your dip. When I was in Mexico I realized that I have a love/hate relationship with black beans. In Mexico these are on EVERYTHING. If you do not like them, you have a problem… I had to get used to them and now I actually kind of miss them! They have more flavor than white beans and can give an extra depth to your dish. Black beans may not look as nice in a guacamole as white beans, but trust me they surely make up for this with their flavor!

(For 1 small bowl of dip – enough for about 1 big bag of chips or as accompaniment for 4 people)

Ingredients
  • Halve a small red onion
  • 1 pickled japlapeño
  • 1 tomato
  • 1 ripe avocado
  • A few leaves of coriander
  • Optional: 1 tablespoon hot sauce, like sriracha
  • 5 tablespoons black or white beans, depending on your preference
  • 1 teaspoon lime juice

 

Chop and mix with a fork

Peel the red onion and cut it into small cubes. Finely slice the jalapeño into small rings.

Chop the tomato into small cubes. Roughly chop the coriander.

Cut the avocado in half, get rid of the stone. In the avocado skin, carefully use a knife to slice the avocado flesh into cubes.

Drain the beans and put them in a serving bowl. Slightly squish them slightly with a fork.

Scoop the avocado chunks out of the skin with spoon and add them to the bowl. Add all the remaining ingredients and a generous seasoning of salt and pepper.

Use the fork to mix the ingredients and bring everything together. Don’t overdo it and leave the guacamole chunky.

Taste and add a pinch more salt, pepper or lime juice if something is missing in your opinion.
