A perfect light dish for a warm summer evening that smells and tastes incredible
These prawns are incredible and as easy as it gets! You can prepare this dish in minutes, giving you more time to enjoy a romantic evening. There is really nothing you can do wrong. The white wine goes really well with the prawns and while prepping only takes minutes you are sure to impress with this dish. Don’t forget to slice up some nice ciabatta to dip up all of the delicious sauce!
(For 2 people– yes exactly, that is you + someone you really like)
Ingredients
- 400g prawns, cleaned and shelled (you can use frozen if you want)
- 300ml of a good fresh white wine that goes well with sea food*, try using a chardonnay or sauvignon blanc
- 6 tablespoons good olive oil (that’s about 60ml)
- 250g cherry tomatoes
- A bundle of spring onions (that’s about 5 or 6)
- 3 cloves of garlic
- 4 handfuls of basil leaves
*Yes – always pick a good wine for cooking – none of that cheap cooking wine. Correct me if I’m wrong, but you want the flavor of the wine to go into your dish. Bad sour wine = bad sour dish. Pick a good one and just drink the rest!
Chop the veggies and simmer everything – yes it’s that easy
Cut the cherry tomatoes in half, cut the spring onions into rings, and finely slice up the garlic cloves. Tore the basil leaves into smaller pieces.
Put a large frying pan with high rim on medium heat. Add prawns, white wine, olive oil, tomatoes, most of the spring onion, 3 hands of basil leaves and the garlic. Generously season with salt and pepper and give it a nice stir.
Bring to the boil and then let everything simmer for about 15 minutes. Meanwhile you could toast up some ciabatta.
Once ready, serve in two deep plates and garnish with the rest of the spring onions and basil.
Serve with toasted ciabatta and a nice glass (or two) of white wine!
