Travel

For me travelling mostly means experiencing different cultures, the easiest way to do this in my opinion is to sample the local cuisine. Whenever I travel I always try to eat at least the national dish and ideally all other foods the country is famous for (which can turn out good and bad)! Luckily I was able to travel quite a bit in the last months. Underneath you can find all culinary travel destinations I have recently visited with a lot of photos of local delicacies.

  • Colombia, Bogota, Cartagena, Medellin, Santa Marta – Colorful ceviches and deep-fried foods
  • Czech Republic, Prague – Feeling right at home with sausage, goulash and beer
  • Germany, Berlin – Eating currywurst in Germany’s capital
  • Hong Kong – Feels like eating dim sum in the future
  • Hungary, Budapest – Getting to know ruin bars, Jewish food and everything paprika
  • Ireland, Dublin – Proper pub food and Guinness
  • Japan, Tokyo, Kobe, Kyoto, Osaka, Hiroshima – A lot more than just sushi
  • Poland, Katowice – Getting to know Silesian cuisine
  • Portugal, Lisbon and Porto – Delicious seafood and pastries in sunny Portugal
  • Portugal again, Faro – I might be addicted to Portuguese seafood!
  • Singapore – Ending up in the Asian melting-pot and eating a lot of Indian food
  • Slovenia, Ljubljana – It has dragons and feels like the Czech Republic + Italian + Austria

🌱🥟 Creamy vegan spinach ravioli 9/40: 5-ing 🌱🥟 Creamy vegan spinach ravioli

9/40: 5-ingredient vegan ravioli made from scratch. The pasta dough was made just from blanched and blended spinach, combined with flour and some salt. The ravioli were filled with pureed cashews, lemon, and basil. 

By now you probably know that I absolutely have everything that includes dough, kneading and rolling-out (pizza is the only exception). But hey, I'm always up for learning a new thing or two. This pasta dough here was very stubborn and kept contracting again, making me end up with very thick ravioli. The @tupperwareglobal ravioli folding device I got from a friend's mom as a gift turned out to be quite useless for this. Ultimately, I chose to form my ravioli by hand.

Flavor-wise these ravioli were quite nice! The taste of the dough reminded me a lot of Russian pelmeni dumplings. The filling felt quite light. I added a sprinkle of nutritional yeast for a little cheesy touch.

Still, the amount of time, work, and frustration going into making these make it feel more like a fail.

I'm going to try 40 new vegan and vegetarian dishes in the upcoming weeks. Gonna eat mostly plant-based up until I reach that number. This was the 9th out of 40. Learned a lot by trying this one.

8/40: Big Asian flavors going on here! Big bunch of basil, sesame oil, garlic, miso, peanuts, fish sauce and rice vinegar. 

This one is hitting all the right notes. Instead of the traditional pine nuts, you have peanuts, instead of parmesan, you got miso and fish sauce, instead of parmesan, and sesame instead of olive oil. It's not really Thai, not really Japanese. But it's definitely not Italian.

I'm going to try 40 new vegan and vegetarian dishes in the upcoming weeks. Gonna eat mostly plant based up until I reach that number. This was the 8th out of 40. Definitely a keeper!

"Pizza? Delivered?? With so much cheese??? But what about you trying vegan recipes??! It's veganuary!!!1!1"

So what 🤷 Life is to be lived. Cut yourself some slack every once in a while. For me that means pizza. Have been eating pretty clean in the last weeks (even before xmas), so hey, why not have a pizza if you fancy one?

I'm going to try 40 new vegan and vegetarian recipes in the upcoming weeks. Gonna eat mostly plant based up until I reach that number - "mostly" but not exclusively.

🌱🍷🥕 Wine-braised carrots and leeks 7/40: 🌱🍷🥕 Wine-braised carrots and leeks

7/40: Carrots and leek braised in butter, olive oil and white wine. Little side dish with smooth flavors.

☝️ The original recipe calls for butter. To make this fully vegan, replace it with coconut fat.

For the wine I went with a 2019 viognier which had a lot of peachy tones in it. Should have braised those veggies a bit longer to make them more tender. But I messed up by turning the heat up too high evaporating the wine too quickly. You live and you learn.

No idea where I got this recipe from back then. It had been waiting to be tried since May 16th 2010. Recipe description read "Delicious and nutritious, this dish is packed full of vitamins and minerals, including vitamin c, folic acid and magnesium." Well, there you go, now you know that as well.

6/40: Fresh little salad made from chickpeas, red onions, cherry tomatoes, pesto, chives and Italian buffalo mozzarella

I'm going to try 40 new vegan and vegetarian dishes in the upcoming weeks. Gonna eat mostly plant based up until I reach that number. This was the 6th out of 40. Okay, but not my favorite.
