Travel

For me travelling mostly means experiencing different cultures, the easiest way to do this in my opinion is to sample the local cuisine. Whenever I travel I always try to eat at least the national dish and ideally all other foods the country is famous for (which can turn out good and bad)! Luckily I was able to travel quite a bit in the last months. Underneath you can find all culinary travel destinations I have recently visited with a lot of photos of local delicacies.

  • Colombia, Bogota, Cartagena, Medellin, Santa Marta – Colorful ceviches and deep-fried foods
  • Czech Republic, Prague – Feeling right at home with sausage, goulash and beer
  • Germany, Berlin – Eating currywurst in Germany’s capital
  • Hong Kong – Feels like eating dim sum in the future
  • Hungary, Budapest – Getting to know ruin bars, Jewish food and everything paprika
  • Ireland, Dublin – Proper pub food and Guinness
  • Japan, Tokyo, Kobe, Kyoto, Osaka, Hiroshima – A lot more than just sushi
  • Poland, Katowice – Getting to know Silesian cuisine
  • Portugal, Lisbon and Porto – Delicious seafood and pastries in sunny Portugal
  • Portugal again, Faro – I might be addicted to Portuguese seafood!
  • Singapore – Ending up in the Asian melting-pot and eating a lot of Indian food
  • Slovenia, Ljubljana – It has dragons and feels like the Czech Republic + Italian + Austria

🌱🍝 43/40: White bean fettuccine alfredo with 🌱🍝 43/40: White bean fettuccine alfredo with peas & sun-dried tomatoes

Fettuccine in a creamy vegan sauce made from white beans, nut butter, garlic and nutritional yeast. Topped off with green peas and sun-dried tomatoes.

Calling this an "alfredo" sauce is rather misleading. Is it a nice creamy sauce? For sure. Is it anything like a "proper" (read: traditional) alfredo sauce? Mneeeh.
Doesn't change the fact I will keep this recipe in my repertoire for sure! It's so quick and easy to make. You can hussle this up in less than 15 minutes.

Beware that this dish is super filling! Pasta, beans, peas. It's carb on carb on carb violence!

Have been trying new vegan and vegetarian dishes in the last weeks and am eating mostly plant-based up until I tried at least 40 new recipes. This was number 43 ✌️ okay okay, I'm really done now. Haha this was a fun little experiment again.

Cauliflower stir-fried with some ginger, garlic, chili and soy sauce. Toss in some basil and you are done.

This recipe is not my favorite to be honest. First of all, calling cauliflower that simmers for 25 minutes in a skillet a "stir-fry" is a long shot. Second of all, the basil in this Chinese flavored dish is not really working for me.

🌱🇮🇳🍛 40&41/40: Indian Saag with chickp 🌱🇮🇳🍛 40&41/40: Indian Saag with chickpeas and homemade naan

Indian spinach dish with lots of flavor and depth from onions, garlic, ginger, chili, ground cloves and cinnamon. Super healthy and very easy to make. Extra body and fiber from chickpeas. This one's dietician approved for sure!

Served with homemade naan bread. Never tried to make naan before. Mine didn't puff up properly. It was quite dense and rather on the dry side. Choosing a griddle pan probably also wasn't the best choice. Oh well, you live and you learn!

🌱🍠🍲 38&39/40: Sweet potato and chickpea c 🌱🍠🍲 38&39/40: Sweet potato and chickpea curry & Indian Upma

The curry is made from sweet potato, red onion, leek, Indian curry paste, chopped tomatoes, tomato puree, lentils, chickpeas, spinach, cilantro, and -of course- coconut milk. Quite a list of ingredients, but can be hustled up in 20 mins, plus 25 mins simmering time. Very filling, bold flavors, and it feels incredibly healthy.

By now I have tried quite a range of vegan sweet potato curries. This one feels like a solid versatile base that you can experiment with and swap out ingredients willy-nilly. Swap the Indian curry paste for Thai curry paste and you got a whole new dish.

I served the curry with Upma (or Oopma); Upma is an Indian thick porridge made from dry roasted semolina. Chili, cumin, curry leaves, raisins, cashews, peas, and coconut flakes give this side dish some proper oomph. I roasted the semolina in the oven - maybe a tad too long. It had a very nutty taste to it. Nonetheless, not bad.

Super easy recipe and a lot tastier than I expected. Just simmer some smushed bananas with sugar, vanilla and a splodge of dark rum. Seems so overly sweet while it is still warm but is absolutely perfect when cooled down.
Have it on bread, or toast, or cheese or peanut butter, or ice cream, or ... So many possibilities.
