Mediterranean warm pasta salad with rucola and olives

A simple and colorful Mediterranean pasta salad for instant holiday mood!

This delicious pasta salad will get you in a summery mood regardless when you serve it. Enjoy it with a nice glass of white wine at home or bring it as a gift when you are heading to a barbecue. It’s simple, quick and ridiculously easy to make. If you can boil water and use a knife, you are practically almost done!

(For 4 people –loved ones or strangers- depending on who you want to impress) 

  • 500g spaghetti
  • 6 fresh tomatoes
  • Optional: 6 dried tomatoes
  • 3 tablespoons balsamic vinegar
  • 5 tablespoons olive oil
  • 1 tablespoon oregano
  • A handful of black olives
  • A big handful of rucola / arugula salad


Cook the pasta and make the salad

Heat a pot with boiling water and cook the spaghetti according to the instructions.

Cut the fresh as well as the dried tomatoes into thin slices.

Roughly chop the black olives.

Mix olive oil, balsamic vinegar, oregano and black olives in big bowl. Add all sliced tomatoes, season with salt and pepper and let marinate till the pasta is ready.


Finishing touches for serving

Add half of the rucola to the tomatoes.

Drain pasta and mix with the tomatoes. The rucola will soften from the heat of the pasta.

Let cool for 2-3 minutes, then add the rest of the rucola right before serving.


Mix once more and share with your loved ones!
